culinary arts 07 (grilled steak/asparagus/bernaise sauce)

greg had an official script reading for render me dead this past sunday eve with ron, mike, viv and i.
okay, i have read the thing a bazillion times and either i feel like i know the characters or story too well but i think it is a load of fun and i believe the rest thought it a hoot too.
we will have to see cuz he sent it in to the screenwriting expo competition on monday. keep your finger's crossed, we could use the cash. we really can't afford our hosting lifestyle. i believe we are nearing an end of an era. dread, i am so addicted to it!
for the event we grilled huge 1lb-er steaks and bundles of asparagus dressed with bernaise sauce. the bernaise is good sh@# (from nigel slater's, appetite) but the grill taste sort of over-powered it but probably good cuz we didn't notice the cubes of butter we were consuming (once we got the blackberry crumble in us too).
bernaise in our world =apprx 2 servings
in a small sauce pan combo
1-shallot
10-ish black peppercorns
tsp-ish tarragon
3 tbl wh wine vinegar 3tbl
boil till reduced to 1tbl-ish
sieve and add liquid to a htd dbl boiler that has two egg yolks waiting in there
whip it up with a squirt of dijon
then slowly start adding in small bits
2/3 cups of butter that is already warm and melted
it gets fluffy and finishes within a couple minutes
pull it off the dbl boiler and keep mixing it whenever you pass it while cooking the other foods to avoid it separating.
we have a long greenbelt running down the alley filled with blackberry bushes and they are ripe and ready (this was my idea to save money cuz it's "free") . greg and i made a dog walk of it and headed out that eve for some picking and an impromptu crumble, which takes seconds to put together (c/o jamie oliver, the naked chef).
crumble -i dbl the crumble to fruit ratio
pinch these ingredients together
8oz flr
4oz butter
3oz sugar
pinch o' salt
and top dress in a baking dish
1lb fruit
3 tbls sugar
cook for 30min (till golden) at 400
voila!
you can't really go wrong with this combo (unless your sauce separates).
steak (& whiskey) would definately be on my short deserted on an island list.
